3 tablespoons extra virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 carrots, sliced
1 celery stalk, sliced
1 medium potato, diced
1 can (400 g) crushed tomatoes
4 cups vegetable broth
1 teaspoon dried thyme or rosemary
Salt and black pepper, to taste
Optional: spinach or kale
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion and cook until softened, approximately 5 minutes.
Add the garlic, carrots, and celery, and cook for 3–4 minutes.
