Recipe: Olive Oil Vegetable Soup

Serves: 4

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Ingredients

  • 3 tablespoons extra virgin olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, sliced

  • 1 celery stalk, sliced

  • 1 medium potato, diced

  • 1 can (400 g) crushed tomatoes

  • 4 cups vegetable broth

  • 1 teaspoon dried thyme or rosemary

  • Salt and black pepper, to taste

  • Optional: spinach or kale

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and cook until softened, approximately 5 minutes.

  3. Add the garlic, carrots, and celery, and cook for 3–4 minutes.

  4. Stir in the potato, crushed tomatoes, vegetable broth, and herbs.

  5. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until the vegetables are tender.

  6. Season with salt and black pepper. Add spinach or kale if desired and cook for an additional 2 minutes.
