Ingredients
For the cake:
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sugar
3 large eggs
3/4 cup extra virgin olive oil
1/2 cup whole milk
Zest of 1 lemon and 1 orange
1 teaspoon vanilla extract
For the glaze:
1 cup powdered sugar
2 tablespoons fresh lemon juice
1 tablespoon fresh orange juice
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, beat sugar and eggs until pale and fluffy.
Slowly add olive oil, milk, citrus zest, and vanilla, mixing well.
Gradually fold in dry ingredients until just combined.
Pour batter into the pan and bake for 40-45 minutes or until a toothpick comes out clean.
Let cake cool completely.
Mix glaze ingredients until smooth and drizzle over the cake.
